Every day the HUG Catering Service offers patients, staff and visitors varied and balanced meals made from local and seasonal products.

The HUG are very mindful as to the origin and seasonality of the produce they use for their meals, labelled Fait Maison (FR) and/or Genève Région - Terre Avenir (FR).

  • 90% of the fresh produce prepared are in season
  • 90% of the fish prepared comes from sustainable fisheries
  • 100% of the beef, veal and pork prepared is Swiss
  • All of the flour and 40% of the peeled vegetables delivered to the central kitchen are grown in Geneva*

In 2021, the central kitchen of the HUG and the largest staff restaurant were audited by an independent company specializing in the sustainability assessment of food. They obtained scores of 85/100 and 70/100 respectively.

These results, incorporate the evaluation of 1,271 different products from 74 suppliers, according to the origin of the goods, the respect for seasonality and the quantity of meat used. The comparison with a similar study conducted in 2013/2014 shows that the HUG has made progress in all areas of sustainability.

Since September 2022, an eco-score indicating the environmental impact of the menu dishes at Chez Gustave brasserie has been displayed. This label raises awareness among customers about their environmental footprint while helping them make an informed choice about the products they consume.

New vegetarian offer

Since 2021, patients have been offered a full vegetarian menu, and a vegetarian dish of the day is offered daily to staff in the restaurants. The vegetarian menu has been a great success and now accounts for 25% of the daily specials served in 2022.

Reduction of disposable tableware

Contenu

The catering service has eliminated single-use containers for birchermüesli and fruit salads, which are now exclusively offered in reusable containers.
